@ElectricDryad I'm heading to bed now. I have an idea of a solution that I am not 100% certain about.

You could theoretically take all that jam, shove it back in your pot, add the sugar back in that you subbed out, and cook the jam again until it thickens. It will then have enough sugar, although with added honey, that it likely would be okay.

Ah! County extension offices! That's what they're called! If you're in the US, call them and ask for advice.

@ElectricDryad ah< yeah, no, that would do it. Honey contains more water/less sugar, so it will throw things off. You need to cook the fruit with sugar and pectin long enough for it to gel, and honey will affect that.

But, more importantly. With hot water bath canning (not pressure canning), you need a certain amount of sugar and/or acid to safely preserve the jam, so even if it set, if that sugar/acid ratio was off, it may not have been safely preserved.

Best to stick with safe recipes, ie recipes from canning equipment manufacturers or, from what I hear, county something or other offices in the US. I would not trust a recipe from a blog, though - I wouldn't trust them to know enough about safe canning procedures.

I'm on my own instance now thanks to @mastohost and I feel like I've started a new playthrough of Mastodon and I need to level up. (An instance only federates with others if there's activity such as a user on another instance boosting a post--so I need lots of boosts! I'm not federated with many other instances yet.)

@matt runs a wonderful instance and I'm grateful I got to get to know Mastodon on writing.exchange. But it's cool having my own instance. Or it will be, once I level up some.

If you want to make notes, you could try something like Microsoft OneNote. It's rather good with decent features.

Threads is not legal under EU GDPR rules.

It is absolutely wild to me that we, as a society, have somehow managed to destroy the telephone without really setting up anything in its place.

Specifically, I mean: for a good long while, there was an expectation that when your phone rang (or, somewhat longer ago, when you got an SMS) that it would be from someone or some business that had a reason to contact you that you found legitimate.

Now? Almost all calls I receive are scams. It is not worth picking up for an unknown caller.

And, despite how (relatively) easy it would be to fix this, no efforts at all are made in that direction?

I just found a WONDERFUL new use of AI!

I just contacted a vendor for support through their web chat interface, and the agent I got responded with one of those terrible canned responses that has nothing to do with my actual issue.

This has long infuriated me, but today, thanks to AI, I realized I had a new option for dealing with it!

Inspired, I replied, "Hey, you sound like an AI which hasn't understood my issue. Could you get a human to read my ticket?"

This is tremendous! Now that we have LLMs in the wild, when a human flunks the Turing Test, I can politely accuse them of being an AI and ask them to escalate my interaction to a human.

Everybody should do this. It will transform customer service.

@ElectricDryad also, if the worst happens and the jam did not set, you now have strawberry sauce or syrup. Still very very delicious and very useable. :)

@ElectricDryad I miss homemade jam. Yum!

I haven't canned in years, but I did used to make hundreds of jars of jam each year.

As long as you followed a reputable recipe, it's more than likely just fine. I used the recipe book put out by Bernardin I think, Bernardin being a manufacturer of canning jars and other equipment.
