Yeah, the timing is always off. It's like they don't consider prep.

To piggyback off what @Fawn said: Serious Eats is great. They have a recipe for the best roast potatoes ever.

I'd also recommend Budget Bytes; and chef John from food wishes is good too.

A lot of recipe writers either lie or dont pay chefs to test recipes. There's no checks on who gets to write internet recipes. Some people make up pure nonsense to sell ad spaces.

And it's official: next time I caramelize onions I'm grabbing a crock pot.

@TellumSiege @Cassandra @Fawn I've read onions can be caramelized in a pressure cooker and oven. I'm planning on giving them both a try at some point. I do not have the patience for tending stovetop onions.
